In the Mood for the Cobbler

What could be a more perfect ending to a summertime meal than easy peach cobbler? Savor the flavors of summer with sliced fresh peaches cooking away with butter and spices. The topping can made from pantry ingredients you have on hand and peaches can easily be substituted with any fruit you have depending on the time of year. The tang of the lemon juice paired with the sweetness of the peaches is perfectly balanced with the crisp topping. Want to make dessert even better? A dollop of fresh whipped cream or cold vanilla ice cream truly makes it the perfect way to end a summer night.

Ummmm, sounds delicious. I couldn’t have said it any better myself.

I was in the mood for some peach cobbler the other day and I will be honest with you I love to cook but my baking skills are a little bit on the rocky side. For some reason they just never seemed to materialize like my cooking skills. But that didn’t deter me here.

I bought some delicious fresh peaches and I would have just served them like that with some sugar and a little whipped cream but I was on a mission. No body ever said dessert had to be difficult, as I was preparing the recipe I was wishing I had stuck to simple.

But I pushed forward.

As I slaved away, which is of course an overstatement, the recipe began to come together.

It landed in the oven and I crossed my fingers.

You might be asking yourself how somebody can botch a cobbler but I have to admit that I have. Now you will forgive me if I say that they are simple to make. They are of course, but that doesn’t mean that there aren’t people out there like myself.

As it baked up I was relieved to see it taking form. I had once made this absolutely abysmal steaming pile of mush. Granted I was twelve at the time but it did run through my head a couple of times before the timer sounds the last time.

When I finally served it for dessert my husband and daughter were both hesitant even thought it looked and smelled great. Of course they had their reasons.

But in the end there wasn’t even any left for the fridge. And I am a sucker for cold cobbler.

It was such a hit that I have been asked to make it again this weekend. And I sure intend to.
